Think about it. By placing the noodles on top of the mashed potatoes, you've now created additional space on your plate for green bean casserole, dressing, corn pudding, etc.

I call BS on this. Besides the classic mashed potatoes and gravy, additional quality toppings include beef and noodles (my favorite), chicken and dumplings, beef stroganoff, beef romanoff, and others. Corn is also a excellent topping, either with just mashed potatoes, mashed potatoes and gravy, or mashed potatoes and beef and noodles. I have to admit though, that there is just something wrong with mixing cottage cheese and mashed potatoes.
