Isn't a verbal/handshake agreement a binding legal contract?

It can be, but often isn't. 

Trying to establish preponderance proof in court when the defense is "that's not what I said" can be very difficult.

College sports are such a cesspool right now. Anyone who can get sued WILL get sued. 

There's a reason professional sports don't operate this way.

Indiana > Everybody (mostly-I’m exaggerating but not by much) in fulfilling NIL opportunities and promises and because of that will always have a seat at the recruiting table.

Once we get a respected system and coach, on court results just might change.

Multiple reasons. Antitrust exemptions, player unionization which leads to CBAs, contracts are a few. Also, making the players employees makes a huge difference.
